Recipe: Pumpkin Spice Granola Bar

INGREDIENTS:

               2 cups oatmeal  

               1 cup whole wheat flour 

               1/2 cup ground flaxseed

               1/3 cup packed brown sugar 

               1 tbsp pumpkin spice (see note below)

               1/2 tsp salt

               1 cup raisins or craisins 

               1/2 cup unsalted pumpkin seeds (pepitas - no shells)

               1 egg

               1/3 cup maple syrup

               1/4 cup canola oil

               1/4 cup pumpkin purée 

               1 tbsp vanilla extract

 

INSTRUCTIONS

               1. Preheat oven to 350 °F. Line a 9 x 13 inch baking pan with parchment paper. 

               2. In a large bowl, mix together oatmeal, whole wheat flour, flaxseed, brown sugar, spice, salt, raisins and pumpkin seeds.

               3. In a small bowl, beat egg then add maple syrup, canola oil, pumpkin purée and vanilla. 

               4. Add liquid ingredients to dry ingredients and mix. Pat mixture evenly into prepared pan.

               5. Bake 20 to 25 minutes. Cut into bars while still warm. Makes about 24 bars. 


Note: you can make your own pumpkin spice blend by mixing the following ground spices together: 2 teaspoons cinnamon, 1/2 teaspoon ginger, 1/4 teaspoon nutmeg, 1/4 teaspoon cloves.
